SC#14 | Apple pie without the pie, but with the toast

On Saturday night, I went to my friend Katie's for an evening of awesomeness that involved friends, quite a bit of vegetarian food, a lot of laughter, and a large amount of bitching.

Let me tell you more about the food: Katie and I had decided that we'd each make a main dish, and then we'd have a dessert. Unfortunately, I forgot to take a picture of my fabulous fresh tomatoes, goat's cheese and olive crumble (but I have some footage of it that might appear in an upcoming video that I might post here at some point.) Katie made pizzas. And for dessert, she made an apple pie.

And MAN, was it good.

The morning after was difficult, because 1) I had no pie although 2) I knew that there was some of this pie left (!!!!) So, I had to act. End of the story: I recreated the apple pie. Without the pie. But with toast. And it was really good.

Apple pie toastie, serves 1
- 2 slices of REAL LOAF OF REAL BREAD, not toast-bread. Got mine from Borough market. You should go once. Borough market is heaven.
- 1 apple
- butter
- granulated brown sugar
- cinnamon

Melt a knob of butter in a frying pan. Peel the apple and slice it as thinly as possible. Put the slices in the pan on medium heat, and sprinkle brown sugar and cinnamon. Pop the bread in the toaster. After 3-4mins, turn the apple slices over, and sprinkle sugar and cinnamon again. When the bread is done, spread just a tiny bit of butter. Cover with the apple slices and sprinkle with more sugar and cinnamon if wanted!
