Christmas at uni...

SC#10 | Jamie's mince pie cookies

I've been almost three weeks without recipes on here! I must have some kind of strange illness. I'm then taking a break inbetween writing essays and helping Mrs Chef (a.k.a Laura) cooking our flat Christmas dinner to post this delicious recipe that I found in the Christmas issue of Jamie's cooking magasine...

Makes about 40+
- 250g unsalted butter, softened
- 140g sugar
- 1 egg yolk
- Grated zest of 1 clementine
- 300g flour
- 1x411g jar fruit mincemeat
- I added 1tbsp of baking powder

Preheat the oven to 180C.
Beat the butter and sugar together in a large bowl until creamy. Add the egg yolk and clementine zest and beat again to combine. Sift in the flour then fold through most of the mincemeat and stir until the mixture starts to come together.
Pull off little biscuit-sized clumps of dough, space them evenly on baking trays lined with greaseproof paper. Dot a little of your save mince meat on top of each cookie. Pop in the oven for about 10mns, until they're golden but still doughy in the middle.
The batter can be frozen instead if you want to keep some for later!

Ca fait presque trois semaines que je n'ai pas posté de recettes ! Je dois avoir attrapé un truc. Je vais donc faire une pause entre l'écriture de mes disserts et l'opération j'aide Mme Chef (a.k.a Laura) à cuisiner notre repas de Noël des colos pour poster cette recette pour des cookies délicieux que j'ai trouvé dans le dernier numéro du magasine de cuisine de Jamie Oliver.

Pour environ 40 cookies :
-250g de beurre doux mou
- 140g de sucre
- 1 jaune d'oeuf
- Zestes d'une clémentine
- 300g de farine
- 1 pot de 411g de mincemeat (la mincemeat est une mixture typiquement anglaise, à base de saindoux, pommes, fruits secs, et épices, et qui sert à faire des mince pies. J'imagine que ça se trouve en France en épiceries anglaise...?)
- J'ai ajouté une cuillère à soupe de levure chimique

Préchauffer le four à 180°C.
Battre le beurre et le sucre dans un grand saladier jusqu'à ce que le mélange soit crémeux. Ajouter le jaune d'oeuf et les zestes de clémentine et fouetter le tout. Ajouter la farine petit à petit puis presque toute la mincemeat ; mettre ce qui reste de côté. Mélanger jusqu'à ce que le mélange soit vaguement homogène.
Faire des petits tas de pâte et les placer régulièrement et bien séparés sur une plaque de cuisson recouverte de papier cuisson. Etaler un peu de mincemeat sur chaque cookie. Mettre au four pour environ 10mns, jusqu'à ce que les cookies soit dorés mais encore tendres au milieu.
La pâte peut être congelée si vous préférez les garder pour plus tard :)

It's never too late for a Christmas wish list...

You might have noticed, I have a burning love for lists. Also, I have a burning love for procrastination, which explains why I suddenly stopped working on my essay, thought about something else to do, and went for this article.

Back to the point. A third thing I love massively is... Christmas. I'm a sucker for December. From December 1st, I turn into an elf. I only listen to Christmas songs (here is my playlist for this year), I get my mini Christmas tree out of the cupboard and have it standing proudly on my desk, I spend hours lovingly staring at my advent calendar... Also, I decorate. I decorate a lot. At home, we would have a full day of turning the house into Santa's freaking place. Alas, this year, this will only happen next week. I've been going a bit mental here though; I've got (fake) sprigs of holly, garlands and ribbon chains all over my room-- and even in the bathroom.

I am therefore going to share my festive mood with you... by sharing my Christmas wish list!

- Pretty masking tape from mt.
 

- All sorts of cake tins like those I saw in Lakeland. Also, this Deco Pen.

- A custom calligraphy stamp from paper pastries.

- Mumford & Sons's Sigh No More, because I can't stop listening to it.

- Pretty jewellery from UO and Forever 21.
 
 


- A poster of London from orkposters.

- A sewing machine.... Old, small, basic, I don't case. My stitches look terrible :(

- Reindeer skirt from UO... Perfect Christmas outfit!

- An Instax mini. Yes. One more camera.

- Plenty of nail polishes. OPI and American Apparel are my favourites, Santa!

- A piggy bank.

- Unlimited funds for The Hummingbird Bakery & Ben's Cookies.
 

I could go on for ages, but I'm afraid this essay really needs to be written... So, you tell me what you want for Christmas, while I go... pretend I'm working and really keep on crafting (that's a word. yup.) more Christmas surprises!

10 things from home I miss the most.

I went to spend the week-end at my friend Millie's. We left on Friday afternoon, along my flatmate Laura, spent an hour in the train, and found ourselves in Oxford. And then, something weird happened.

We got into a car.

That was the first of the many strange things that we experienced over the week-end. Let me explain: being in a car isn't weird in itself. But the last time we had been in a car was... two months ago for me. There are many other things that we don't do, can't do, or miss because of living in halls. This week-end in a real homey home reminded me of them.

1. Having a sofa. The feeling we got, sitting on a sofa, watching TV, a glass of wine in hand? Priceless. I am going to spend so much time lying on a sofa over the Christmas holidays...
2. A dishwasher. Having a meal at uni is synonym of washing up. Sooo muuuuch washing up. It never ends. I miss having a nice little machine which does it for me.
3. Silence. As I mentioned before, London never sleeps. This makes it hard for me to sleep.
4. Sleeping in a comfy double bed. Note the presence of two adjectives. Beds at uni aren't made of stone, but it's not that fun either. And they're SMALL.
5. Cooking basics. When I want to make a cake, I always end up missing an ingredient, or having to buy something really expensive (talking to you here, nutmeg and cloves) that I'll use only once. It was easier back home!
6. Speaking of food, I miss 'real' food, i.e. a meal made by my mom/my dad which doesn't involve toast nor wafer-thin ham, 25p pasta or disgusting mushroom 'soup in a cup'.
7. Being in a car. Or rather, being able to go places without having to use my Oyster card/walking.
8. French food. Nothing much to say apart from BREAD AND CHEESE I MISS YOU SO, SO MUCH.
9. Living in a place that isn't opened by a magnetic card.
10. And last but not least... I miss my family and friends ! See you guys in...

Je suis allée passer le week-end chez mon amie Millie. Nous sommes parties vendredi après-midi, avec également ma coloc Laura, nous avons passé une heure dans le train, pour nous retrouver à Oxford. Et là, quelque chose d'étrange est arrivé.

Nous sommes montées dans une voiture. 

C'était la première d'un grand nombre de choses bizarres qui nous sont arrivées durant le week-end. J'explique : être dans une voiture n'est pas bizarre en soi-même. Mais la dernière fois que nous avions mis un pied dans une voiture remontait à... deux mois pour ma part. Il y a un certain nombre de choses que nous ne pouvons pas faire, que nous ne faisons pas ou qui nous manquent parce qu'on vit en résidence étudiante. Ce week-end passé dans une vraie petite maison me les a rappelées.

1. Avoir un canapé. Ce que nous avons ressenties, assises sur un canapé, un verre de vin à la main ? Ca n'a pas de prix. Je vais passer touuut mon temps allongée sur le canapé pendant les vacances de Noël...
2. Un lave-vaisselle. A la fac, manger est synonyme de vaisselle à faire. Touuuuut le teeeemps de la vaisselle. Ca ne s'arrête jamais. Avoir une gentille petite machine qui fait ça à ma place me manque terriblement.
3. Le silence. Comme je l'ai mentionné précédemment, Londres ne dort jamais. Ce qui ne m'aide pas à dormir, moi.
4. Dormir dans un lit double et comfo. Notez la présence de deux adjectifs. Les lits à la fac ne sont pas durs comme de la pierre, mais c'est pas la joie non plus. Et ils sont ETROITS.
5. Des basiques pour cuisiner. Quand j'ai envie de faire un gâteau, il me manque toujours un ingrédient, ou alors je suis obligée d'acheter quelque chose de particulièrement cher (c'est à vous que je parle, muscade et clous de girofle) que je n'utiliserai qu'une fois. C'était plus facile à la maison !
6. En parlant de nourriture, la 'vraie' nourriture me manque, j'entends par là des repas préparés par Maman ou Papa et qui n'incluent ni toast, ni jambon ultra fin, pâtes à 30cts ou soupe aux champignons en sachet dégueu.
7. Etre dans une voiture. Ou plutôt, pouvoir me déplace sans avoir à sortir mon Oyster card/marcher.
8. La cuisine française. Pas grand chose à dire à part PAIN ET FROMAGE VOUS ME MANQUEZ TROP TROP BEAUCOUP.
9. Vivre dans un endroit qui ne nécessite pas une carte magnétique pour rentrer.
10. Et le meilleur pour la fin... Ma famille et mes amis me manquent ! On se revoit dans...
